Children look forward to summer because it is usually a time filled with holidays, fun and excitement. This would also mean that they look forward to treats all day at home. As parents, we constantly find ways to provide food to our children which are delicious but at the same time nutritious as well. Specially in the current New Normal, when kids are mostly at home, the tendency to snack increases significantly.
Below are easy recipes of summer treats which your children will actually look forward to eating:
Berry Lemon
Ingredients:
- ½ cup Orange juice
- 1/2 cup Berries
- 2 tbsp Lemon juice
- 2tbsp Lemon zest
- 2 tbsp Honey
Process:
- Combine all ingredients in a blender and blend until smooth.
- Pour the mixture into rubber moulds – to add to the fun, you may pour them into moulds of different shapes and sizes and freeze overnight.
- Serve them chilled after a well-deserved break from summer assignments or hours of exercise or playing.
Rainbow fruit
Ingredients:
- 1 cup of mixed, sliced fruits
- 1/2 cup Coconut water
- 2 tbsp Honey
Process:
- Place the mixed fruits into moulds and keep aside.
- Take a bowl and mix Coconut water and Honey.
- Pour the Coconut water and honey mix into the moulds. Tap the mold lightly on the table to remove any air pockets.
- Freeze overnight or until completely chilled.
Berries and Cream
Ingredients:
- 1/2 cup Berries
- 2 tbsp Honey
- 1 cup Greek yogurt
- ½ tsp Vanilla essence
Process:
- Puree the berries until smooth (add a touch of water, if needed, to get the mixture to blend smoothly) and keep aside.
- In a separate bowl, stir together the yogurt, honey and vanilla essence.
- Take the moulds and spoon berries and yoghurt mix into them in alternative layers and freeze.
- Serve them chilled, as an alternative to ice-cream on a hot summer day.
Coconut Lime
Ingredients:
- 30 ml coconut milk
- ¼ cup lime juice
- 2 tbsp lemon zest
- ¼ cup honey
Process:
- Stir together all ingredients.
- Pour into moulds and freeze. Serve chilled.
- Coconut helps keep the body hydrated while honey and lemon zest will be a treat for the taste buds.
Sneakey Spinach
Ingredients:
- 1/2 cup milk
- 1 cup fresh spinach
- ¼ cup honey
- 2 bananas
Process:
- Combine all ingredients in a blender and puree them until smooth.
- Pour into moulds and freeze, serve chilled.
- This can be a fun and easy way to get children to eat their greens while enjoying a refreshing summer treat.
Fruit Yogurt
Ingredients:
- 1 cup cut Fruits
- 1 cup Yogurt
- 1 tbsp Honey
Process:
- Mix all the ingredients together.
- If you serve it chilled, it can be used as an alternative to ice – cream
Fruit Milk Shake
Ingredients:
- 1 cup cut Fruits
- 1 glass of cold milk
- 1 tbsp Honey
Process:
- Mix all the ingredients together and blend them until smooth
- Garnish with dry fruits (optional)
